This recipe comes from a book that my mother (Zara’s grandmother) had called New Zealand Quick and Easy. it was put out by the Chelsea Sugar company. In the book the biscuits are called Mrs Thompson’s Honey Biscuits. Zara had some other work to do on the day she made these so we agreed that if she made the biscuits, I would do the blogging!! These biscuits are very easy to make and great for kids to do on their own.

What you need

  • 125g butter
  • 2 tblspns honey
  • 2 tblspns brown sugar
  • 1 1/4cups flour
  • 1 tspn baking powder
  • Raisins for decoration on top (optional- as you can see in the recipe book picture)

What to do

Melt butter, honey, brown sugar in a saucepan large enough to mix all ingredients. Remove from heat. Sift in flour and baking powder and mix until combined. Place tablespoonsful of the mixture on a baking tray and flatten with a fork. Bake at 160°C for 10-15 mins or until lightly brown.
