This is a delicous chocolate cake that is good for special occasions and is really easy to bake.
What you need:
150g butter
1 cup hot water
1 teaspoon instant coffee
3/4 cup dark chocolate bits
1 1/4 cups sugar
3 eggs
2 teaspoons vanilla essence
2 cups of flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup cocoa
icing sugar
Melt butter in a saucepan large enough to mix all the ingredients. Remove from heat and stir in hot water, instant coffee and chocolate bits. Mix until chocolate melts. Add sugar, stirring until disolved. Add egg and vanilla essence and beat well with a wooden spoon until combined. Sift flour, baking powder, baking soda and cocoa into the saucepan and mix to combine. The batter will be quite thin. Pour mixture into a baking paper lined 20cm square cake tin. Bake at 180°C for 50 to 55 minutes or until cake springs back when lightly touched. Leave in the tin for 10 minutes before turning on to cooling rack. When cold, dust with sifted icing sugar, or ice with Ganache.

Hi Amy and family, Thanks for the comment about the chocolate cake. This is Kayi’s favourite recipe at the moment Kayi made it as our Christmas cake this year. Mum put the decorations on. He also made one for snacks. Tomorrow is Kayi’s birthday so I am going to make one for that. Hope you are you well.
