This Banana Cake is one of the things I don’t usually like to bake but I was up to it after we went on a big walk down by the marina along the walkway by the boats. Me and Zara took our scooters and we kept on throwing rocks in the water and I almost hit a boat, that gave me a bit of a fright! anyway the first worst part about it was where I had to peel and mash the 4 bananas that had been in the freezer for so long and the second part was doing the flour which spilt all over the floor! but luckily it was ready in time for desert Yum!!
What you need
- 150g butter
- 1 cup sugar
- 2 eggs
- 1 cup mashed banana
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 tablespoons milk
- Lemon icing or icing sugar – whatever you wish
Method
Melt butter in a mixing bowl in the microwave or over hot water. Add sugar,eggs and mashed banana. Mix to combine. Sift in flour and baking powder. Dissolve baking soda in milk and add to the mixer bowl. Beat until thoroughly combined. Pour mixture into baking paper lined 20cm round cake tin. Bake at 180 C for 50-55 min. Leave in tin for five minutes before turning onto a cooling rack. And when cold ice with lemon icing or icing sugar.
